I often am guided by what has been happening recently in the news or in the workplace to determine what I should write about, sometimes there are changes and other times, just reinforcements on what has previously been said. Today it is just a recipe, one that has been amended but one that warms the soul. As the days get darker and the weather gets colder and our days are filled with rain, cold, sleet, hail and snow (and if you notice those are all four letter words) we need something to perk the day up.
This is an easy one and yet so good and I take all the short cuts I can- I put a small amount of butter in a pan and cook a chopped small onion until the onions are translucent and add a chopped up carrot and you are more than welcome to slice or dice or however you like your carrots adding about a cup of cubed acorn squash or sometimes I even use sweet potatoes instead or even a small zucchini sliced and cover and cook just till slightly tender. I then add a box of chicken broth or approximately three cans of chicken broth (for those non meat eaters, you are more than welcome to use vegetable broth). Add into that bay lear, basil, salt, pepper, thyme, and a pinch of cumin. Warm these all together and then I add approximately a half of a cup of macaroni or your choice of small pasta and cook again approoximately 9-12 minutes till tender and serve it up. (Don't forget to remove your bay leaf as few people actually like to eat it but it flavors nicely. So now you have a tummy warmer and something good for you as well and quite easy. Pick up a loaf of bread on your way home and you have your meal. So now that your food is ready, remember we have time change this weekend and make it a great day!
